Bunna: Green Coffee Beans. Discovered in Ethiopia's most fertile Kaffa region, bunna is still prepared and served throughout Ethiopia in the same locally established traditional ceremony created many centuries ago. The green coffee beans are washed with fresh water, then immediately roasted over an iron griddle. As the beans roast, they darken and begin to release a powerful, mouth-watering smoke. Removed from the heat, the beans are hand ground to a powder with a wood or iron pestle and mortar. The coffee is then brewed in a Jebena, a bulbous clay pot with a narrow neck and modest spout and served in a small clay or ceramic cups. |
